Sorbitan Stearate

Sorbitan Stearate is a popular, vegetable-derived, oil-loving emulsifier formed by the attachment of sorbitan (a dehydrated sorbitol/sugar molecule) with the fatty acid Stearic Acid, creating a molecule that is partly water-soluble (sorbitan part) and partly oil-soluble (stearic part). It is suitable on its own for water-in-oil emulsions, where water droplets are dispersed in oil. More commonly, it is used as a co-emulsifier alongside other water-loving emulsifiers. Its CAS number is 1338-41-6.
